For this restaurant-style mix vegetable, we need some fresh vegetables. You can add your favorite vegetables to this curry. So today I am adding my favorite veggies like potatoes, cauliflower, capsicum, peans, carrots, paneer. INGREDIENTS
- 1 bowl cauliflower
- 1 bowl French beans
- 1 bowl capsicum
- 1 bowl potato
- 1 bowl peas
- 1 bowl carrots
- 1 bowl paneer
- Some cashews
- Oil for frying
For masala
- 4 to 5 tbsp oil
- 1 bay leaf
- 1 tsp cumin seed
- 1 black cardamom
- 2 green cardamom
- 7 to 8 cloves
- 2 to 3 cinnemom sticks
- 7 to 8 garlic cloves
- 1 to 2 inch ginger
- 5 to 7 cashews
- 3 medium size onions
- 2 tomatoes
- 1 tbsp salt
- ½ tsp turmeric powder
- ½ tbsp garam masala powder
- 1 tbsp cumin powder
- 2 tbsp coriander powder
- 1 tbsp red chili powder
- 1 tbsp dry fenugreek leaves
- 1 tbsp sugar
- 60 to 70 ml water
HOW TO MAKE RESTAURANT-STYLE MIX VEGETABLE CURRY?
First, chop the vegetables into medium size cubes. Set it aside. Here, you can add your favorite vegetables too.
Take a kadhai, add 4 to 5 tbsp oil. Heat it for 40 to 50 seconds on a high flame. Now add bay leaf, whole spices. Add garlic and ginger. Add cashews.
Sauté it for 20 seconds. Then add onions.
Add salt and cook them for 4 to 5 minutes on high flame.
Then add tomato. Cook them for 2 to 3 minutes. After that turn off the heat, leave it to cool down.
Then grind them into a fine paste. Set it aside.
Now in the same kadhai, add 40 to 50 ml oil. Now add potatoes, sauté it for 1 minute. Then add cauliflower. Cook them for 2 to 3 minutes on high flame. Cover it cook it for 3 minutes on high flame.
Then add french beans, carrots. Cover it and cook it for 2 minutes. Here, we have to fry the vegetables and cooked them a bit. Do not overcook the veggies.
Add peas and capsicum. Again cook it for 2 to 3 minutes. Now remove the cooked vegetables.
Sauté some cashews for 10 to 20 seconds. Remove it from the oil.
In the same kadhai, add curry masala. cook it for 2 to 3 minutes on high flame. Then add all powdered spices.
Mix well and cover it for 10 to 15 minutes on medium flame.
After that sauté the masala for 3 to 4 minutes on high flame.
Then add fried veggies. mix well.
Add paneer and fried cashews.
Add water and coriander leaves. Mix well and cook for 3 to 4 minutes on high flame. Then turn off the heat.
It is ready to serve. If you want to leave it dry, do not add water to this.
