Indian Sweets

Ingredients

For the Kaju (Cashew) Dough:

1 cup cashews (kaju)

1 cup sugar

1 cup Dessicated coconut

2 to 3 cardamom

1 tsp ghee

40 to 50 ml milk

For the Pista (Pistachio) Filling:

20 to 25 pistachios (pista)

4 to 5 almonds

3 to 4 cashews

A few drops of green food color (optional)

Kaju Pista Rolls Sweets

1. Prepare the Pista Filling:

In a pan, Add the pista,almonds, cashews. Dry roast them for 3 to 4 minutes. Then chop them into fine peices.

After that, add some cooked kaju dough(mentioned below) in it and mix well. You can also use green Food color.

2. Prepare the Kaju Dough:

Grind the cashews, cardamom, Dessicated coconut, and sugar into a fine powder.

Add this in a pan. Add milk.Then cook them on medium to high heat, stirring continuously, until it forms a smooth dough. Here add some saffron milk for ywllow color. Or you can avoid saffron of you don’t have. Add ghee and mix well, and remove from heat.Let the dough cool slightly, then knead it gently to make it smooth.

3. Assemble the Rolls:

Roll out the cashew dough into a thin sheet using a rolling pin.Place the pista logs on the cashew sheet and gently roll the cashew dough around the pista filling.

Trim the edges and cut the roll into desired lengths.

4. Serve:Garnish with silver varak (optional) and serve these rich Kaju Pista Rolls as a divine offering or festive treat.
