Chicken Biryani Recipe

Chicken biryani recipe | Learn how to make a delicious chicken biryani at home with step-by-step photos and video. Biryani is a traditional rice dish made with chicken, mutton, or sometimes vegetables or potatoes.

Biryani is a royal dish that is made in royal families and is not so popular and affordable for common people. But, these days, biryani become so popular that you can find it easily at any street dhaba or in restaurants.

Today, we will make biryani with chicken. Biryani is a flavored rice that is cooked with marinated chicken, and rice is topped with saffron milk, ghee, fried onions, and coriander leaves. It is very easy to make at home in one pot. You can make this recipe on weekends or on any special occasions.

INGREDIENTS

For marination of chicken

  • 500 grams of chicken with bones
  • 4 medium sized onions
  • whole spices(2 cinnemon sticks, 3 green cardamom, 2 black cardamom, 5 to 6 cloves,1 tsp cumin seeds,6 to 7 black peeper)
  • 1 small bowl curd(30 to 40 grams)
  • 2 tbsp crushed ginger garlic
  • 3 tbsp coriander leaves
  • 3 to 4 green chilies
  • 1 tbsp red chili powder
  • 2 tbsp salt
  • 1 tsp turmeric powder
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tbsp dry fenugreek leaves

Chicken and rice

  • 4 to 5 tbsp clarified butter (ghee)
  • 1 tbsp refined oil
  • 2 bay leaves
  • 1 tsp cumin seeds for tempering
  • For rice – 200 grams basmati rice
  • water
  • 1 tbsp salt
  • 1 tbsp oil
  • 2 bay leaves, 1 tsp cumin seeds, 2 green cardamom, 1 tsp crushed ginger garlic
  • some cashews and raisins
  • 3 to 4 tbsp saffron milk
  • Coriander leaves
  • 3 to 4 tbsp ghee
  • 3 drops of kewara extract

How to make chicken biryani (step-by-step photos)

First, take a pan. Heat some oil on high flame. Then, add sliced onions. Saute it for 5 to 8 minutes on high flame until it turns light golden in color. Then remove it from the oil. We used these fried onions for chicken and rice.

Now, take some chicken pieces. Wash them well. Then add whole spices. Add curd and crushed ginger garlic.

Add half fried onions in the chicken.then add turmeric powder, salt, and all powdered spices. Add dry fenugreek leaves. Now mix it well and leave it to marinate for at least 20 to 30 minutes.

After that, take a pan. Add ghee and oil. Heat it for 2 minutes. Add bay leaves and cumin seeds. Then, add marinated chicken.

Now, cook them for 5 minutes on high flame. Then cover it and cook it for 15 to 20 minutes until the chicken cooks well.

Meanwhile, take a pot and boil some water(full pot water). Use a large pot for rice cooking. When the water boils, add bay leaves, cumin seeds, ginger garlic and cardamom, and oil.

Then add basmati rice. But soak the rice for 30 minutes before starting the cooking process. Always use soaked rice for biryani. Now, cook the rice on high flame for 15 minutes (we need 70% cooked rice). After that, drain the water from the rice.

Our chicken is also cooked. Add some cashews and raisins. Then, add the rice layer over the chicken.

After that, top the rice with feied onions, saffron milk, coriander leaves, ghee, and kewara. Cover the lead and cook the biryani on low flame for 10 to 13 minutes. Then, turn off the heat and leave it for 5 minutes. Chicken biryani is ready to serve. Serve it warm with some raita or salad.
