Ingredients
– 1 cup rolled oats
– 1 tablespoon oil
– 1 tbsp crushed garlic
– 1 small onion, finely chopped
– 1 small tomato, finely chopped
– 3 to 5 tbsp chopped cauliflower
– 1 small carrot, finely chopped
– 1/2 Capsicum, finally chopped
– 1/4 cup green peas
– 1/4 cup corn (optional)
– 1 green chili, finely chopped (adjust to taste)
– 1/2 teaspoon red chili powder
– 1/2 teaspoon kashuri Methi
– 1 sachet Maggie masala powder
– Salt to taste
– 3 cups water
– Fresh coriander leaves, chopped (for garnish)
Method
1. **Heat oil:**
In a pan, heat the oil over medium heat. You can add cumin sedds.
2. **Sauté vegetables:**
Add garlic, chopped onions and green chili. Sauté until the onions turn golden brown. Add tomatoes and cook until they become soft.(optional)
3. **Add vegetables:**
Add cauliflower, carrots, green peas, Capsicum and corn. Cook for 6 to 10 minutes, stirring occasionally.
4. **Spice it up:**
Add kashuri Methi, red chili powder, maggie masala and salt. Mix well.
5. **Cook oats:**
Add the oats to the pan and mix well with the vegetables. Pour in the water and bring it to a boil.
6. **Simmer:**
Reduce the heat and let it simmer for about 5-7 minutes, or until the oats are cooked and the mixture reaches your desired consistency. Stir occasionally to prevent the oats from sticking to the pan.
7. **Finish:**
Add garam masala (if you like) and mix well. Cook for another 1-2 minutes.
8. **Garnish and serve:**
