Kulfi is a indian ice cream made with reduced milk and flavored this milk with kesar, cardamom, nuts,fruits , chocolate, etc. You can add any flavor to the kulfi mix. Sometimes, we can use fresh cream to give this more texture.

But traditionally, kulfi is made with reduced milk. And it tastes amazing. You can feel the grainy texture of reduced milk and creaminess also. Make this as a dessert, and it is perfect to serve in these hot summer days. You can make this on festivals like holi, Diwali, rakshabandhan, or Eid.

INGREDIENTS

  • 600 to 700 liter full fat milk
  • 4 to 5 tbsp condensed milk/7 to 9 tbsp sugar
  • a pinch of saffron
  • 1/2 tsp cardamom powder
  • 200 ml amul fresh cream
  • chopped nuts(almonds, cashews, pistachio)

Kesar Matka Kulfi Recipe

Take a heavy bottom pan or pot. Add milk. You can increase the quantity of milk if you want to make more. Add condensed milk. Or in place of condensed milk, use sugar. Add saffron.

Now, cook the milk on high to medium flame until it reduces. You have to stire the milk continuously. And for fast cooking, cook them on high flame. When it comes to a little bit thick in consistency (as shown in photo), Turn off the heat. It should not be too thick and too thin. Allow it to cool down for 10 minutes.

Add cardamompowder. Add fresh cream. Mix it well. Add some chopped nuts.

So we are making matka kulfi. That’s why here I am using clay pots as ice cream molds. You can use any bowls or containers. Pour the kulfi mix. Top it with some nuts and saffron. Freeze it for 5 to 6 hours or overnight.
