1. **Prepare the Tomatoes:**
-First, roast the tomatoes and peel them. If you prefer a smoother sauce, you can blend the whole peeled tomatoes in a blender or food processor until smooth. If you like a chunkier sauce, you can crush them by hand or with a fork, knife.

2. **Sauté Garlic (and Onion if using):**
– Heat the olive oil in a medium saucepan over medium heat. – Add the chopped garlic, basil and sauté for about 30 seconds to 1 minute, until fragrant. If using onion, add it with the garlic and sauté until the onion is soft and translucent.
3. **Add Tomatoes and Seasonings:**
– Pour the tomatoes into the saucepan. – Add salt, sugar, oregano, basil, ketchup, vinegar and red pepper flakes (if using). Stir well to combine.

4. **Simmer:**
– Bring the sauce to a simmer, then reduce the heat to low. – Let it simmer for about 10 to 20 minutes, stirring occasionally, until the sauce thickens to your desired consistency.

5. **Taste and Adjust:**
– Taste the sauce and adjust the seasoning if needed. You can add more salt, sugar, or herbs to suit your taste.
6. **Cool and Use:**
– Allow the sauce to cool before spreading it on your pizza dough. Any leftover sauce can be stored in an airtight container in the refrigerator for up to a week or frozen for up to three months.Enjoy❤️
