Creme caramel is a gluten-free dessert. Creme caramel or flan is a traditional Spanish dessert. It is also known as flan. Flan or creme caramel both are similar dishes. This is a luxurious single-serve custard basked dish coated in a sweet caramel glaze. I love this dessert and try this to make without an oven. Here I’ll show you step by step method to make this tempting dessert without an oven. You can also try Mango Panna Cotta. And it is as delicious as baked one.
What is creme caramel/ flan?
Creme caramel is a simple custard-based dessert which is covered with caramel glaze. It is really just a custard made of cream, eggs, sugar, milk, and vanilla essence. Firstly you need a golden color caramel that is poured in the bottom of the ramekin or mold. Then pour the custard and cook it. Once it is cooked it is turned out from the mold and serve. Some tips for the best creme caramel
- Why flan has bubbles- Never overmix the egg mixture. Incorporating air into the egg mixture they will remain in the custard after steaming. That’s why do not whisk eggs so much.
- A water bath is important for custard because it allies the custard to stay moist and creamy while full cooking.
- Always use room temperature eggs
- Straining is important with the custard mixture to get the silky smooth texture.
- The temperature of milk never uses boiling hot milk because when you add hot milk into the eggs it starts to scramble. Use just a little warm or lukewarm milk.
INGRIDENTS
- For caramel
- 6 tablespoon sugar
- 3 tablespoon water
- For custard
- 2 eggs
- 280 ml milk( use full fat milk or evaporated milk)
- 30 ml cream (optional)
- 1 tablespoon sugar
- A pinch of salt
- 1/4 tablespoon vanilla essences
- 4 tablespoon condensed milk

How to make caramel?
If you are facing a problem with making caramel then follow these steps carefully. Take a saucepan to add sugar.
Add water into it.
Heat the sugar on medium flame and wait for 3 minutes until sugar dissolves. Do not use any spoon or spatula while making caramel. Otherwise, sugar starts crystallizing.
After that on low flame cook the sugar. You can see after 6 to 7 minutes that sugar turns its color.
Swirling occasionally until caramel begins to turn amber.
It takes almost 20 minutes to make. When you see small bubbles then turn off the heat. Caramel is ready.
Work quickly at this stage. Divide a thin layer of caramel between molds. Swirl molds to coat bottom evenly. Set aside for later cooking.
How to make custard ?
Take a bowl crack two eggs.
Add sugar and vanilla essence.
Add a pinch of salt. Whisk the eggs just a bit. Do not overbeat.
Take a saucepan add milk and cream. Heat it on low flame.
Add condensed milk. You can adjust the sweetness. Then heat the milk mixture for about 2 to 3 minutes or until small bubbles form at the edge of the pan. We don’t want to boil hot.
Then combine milk with egg mixture. Pour the milk over the eggs and whisk it continuously or just pour little bit milk at a time because we don’t want scrambled eggs.
After that strain the custard mixture in every moulds. Do not fill whole.
Pour the custard mixture in moulds.
Now in any heavy bottom pan add water and on high flame heat it for 3 minutes.
Then place the moulds for steaming. Close the lead. Turn the flame low. Cook for 20 to 25 minutes. You can cook this in oven on 350 degree f. About 25 minutes.
Then check with toothpick. If it comes out clean or the upper surface is set then turn off the heat and allow to cool down.
After that place it in refrigerator for 48 hours. Then, with the help of knife loosen the sides and remove it from the mould and turn over on serving plates.
The silky smooth creme caramel is ready to serve.
