Vermicelli payasm- This is also known as Seviyan kheer. Vermicelli payasm is an instant one pot recipe and quick, easy and amazing sweet dish which is made with vermicelli, milk, ghee(clarified butter), and sugar. You can also call this semiya kheer or payasm. This is one of the most easiest kheer variety that can be prepared in one pot within 15 to 20 minutes. You can make this in any festive occasion or to fulfill your sweet cravings.
Vermicelli payasm
To make Vermicelli payasm we need roasted vermicelli, full-fat milk, sugar, or a pinch of green cardamom powder for aroma. This can be made with any kind of vermicelli that is available in the market. There are many varieties of Vermicelli available like Rice vermicelli, Refined flour vermicelli, Ragi, or wheat flour vermicelli. In this recipe, we used Refined flour(maida)vermicelli.
You can use readymade roasted and packed vermicelli too. For nice and rich flavor always use full-fat milk. Or, for nice aromatic flavor use a pinch of green cardamom powder. Dry roast the Vermicelli and you can store it in an airtight container for 1 month.

INGREDIENTS
- 500 ml milk
- 60 grams vermicelli noodles
- 4 tablespoon of sugar
- A pinch of green cardamom powder
- Some chopped nuts
- 4 to 5 tablespoon ghee(clarified butter)

Method
Take some vermicelli noodles and crush them and take a pan add some ghee and roast the vermicelli till slightly golden in colour on medium flame. Do not brown them. Or you can roast them on low flame too.
Take another deep bottom pan add milk and boil them on medium flame.
When milk starts boiling then add roasted vermicelli then cook for 4 to 5 minutes on medium flame.
After that add sugar and cardamom powder and cook 1 minute on high flame and stir it continuously. You can add nuts at this step. Then turn off the heat. You can adjust sugar as per your taste.
We are using here thin vermicelli noodles which is look like this after cooking. You can serve it warm or chilled.
If you are serving after a while it may have thickened. Add some milk and stir it to adjust the consistency. Here you can warm it if you want warm kheer or if you want chilled then just mix the milk in chilled kheer and mix it.
