Ingredients

■ 2 cup suji (semolina/rava)-

■ 1/2 cup yogurt

■ 1 to 2 cups of water (adjust as needed)

■ 1 small onion, finely chopped

■ 2 to 3 small tomatoes, finely chopped

■ 4 to 6 green chillies, finely chopped (optional)

■ 1 Capsicum, finely chopped

■ 1 carrot(grated)

■ 2 tbsp red chilli powder

■ Salt to taste

■ A handful of coriander leaves, chopped

■ Oil for cooking(here I used mustard oil)

Method

Finely chop the Vegetables. In a mixing bowl, combine the suji, yogurt, and water. Add the chopped onion, tomato, green chilli, Capsicum, carrot, red chilli powder, salt, and coriander leaves to the batter.

Mix well.- Mix well to form a smooth batter. Let it rest for about 15-20 minutes to allow the suji to absorb the moisture. Or you can just mix everything(as shown in the video).- After resting, check the batter consistency. It should be thick but pourable. Add more water if needed.

**Cook the Pancakes** Heat a non-stick pan or griddle on medium heat. Add a little oil to grease the surface.

– Pour a ladleful of batter onto the pan and spread it gently to form a pancake.

– Cook on medium heat until the bottom is golden brown and the top starts to set. Flip the pancake and cook the other side until golden brown and cooked through.

– Repeat with the remaining batter, adding oil as needed.

**Serve:**
