Macaroni Soup | Vegetable Pasta Soup

Macaroni vegetable soup recipe | Let’s make this quick and easy vegetable soup with macaroni. Or we can say macaroni soup. It takes only 10 to 15 minutes. You can make this soup for snacks, breakfast.

And it is also very healthy because we added a lot of vegetables in it. Recipe is quite basic and the ingredients are easily available in everyone’s kitchen. Your kids will love this recipe and you can feed them some veggies with this recipe.

INGREDIENTS

  • 3 tbsp oil
  • 1 tbsp chopped garlic, green chilies
  • 1 medium-sized onion
  • 3 to 4 tbsp carrots
  • 4 tbsp Capsicum
  • 4 tbsp sweet corns
  • 4 to 6 tbsp cabbage
  • 1 bowl tomato puree(2 tomatoes)
  • 1 tbsp salt
  • 3 tbsp tomato ketchup
  • 1 tbsp vinegar
  • 1 tbsp soy sauce
  • 1/2 tbsp red chilies flacks
  • 1/2 tbsp Oregano
  • 400 to 500 ml water
  • macaroni/pasta(any of your choice)
  • 1 tbsp corn starch and 3 to 4 tbsp water

METHOD

Take a pan. Heat some oil. Add finely chopped garlic, green chillies and Onions. Saute it for 2 to 4 minutes on a high flame. Then add other veggies like carrots, Capsicum, cabbage, corn, paneer, olives etc. Saute them for 3 to 4 minutes.

Then add tomato puree, ketchup, salt, soy sauce, vinegar, chilies, and Oregano. Cook them well on medium to high flame for 5 to 6 minutes.

After that add water and macaroni. Now cook the pasta for 10 minutes or until the pasta is cooked well.

When the macaroni is cooked, add corn starch and water slurry. And mix well. For the last time, cook it for another 3 to 4 minutes on high flame. Macaroni soup is ready to serve.
