Patoli are sweet stuffed steamed rice rolls, which are popular in the goa and konkan regions of India. It is generally made during ganesh Chaturthi.

One of the best parts of this recipe is that it is a gluten-free and steamed sweet dish. So yes, it is not too sweet or fried one. You can enjoy these steamed rice rolls as a guilt free dessert. So, these rice rolls are stuffed with fresh coconut and jaggery. It is steamed in fresh turmeric leaves. That’s why they acquire their sweet and floral fragrance.

INGREDIENTS

  • 1 coconut fresh
  • 1 bowl jaggery
  • 1 tsp cardamom powder
  • 1 tbsp clarified butter (ghee)
  • 1 bowl rice flour
  • 30 to 50 ml water

METHOD OF MAKING PATOLI

Take a fresh coconut and grate it. Then take a pan. Add some ghee to it. Saute the coconut for 2 to 3 minutes.

Add cardamom and Jaggery. Cook them on medium to high flame. When it turns a little bit dry in consistency, turn off the heat. Allow it to cool down. You can also add some chopped nuts if you want.

Now take a bowl. Add some rice flour. And add a pinch of salt. Pour some water mix it well and make a thick batter(just like dosa batter). But it should not be too runny.

Now we need some fresh turmeric leaves. Wash them and cut them medium-sized pieces. Apply some ghee. Then spread some rice batter.

Spread a thin layer of rice batter. Then add some stuffing. Flip the other half over it and press the leaf to pack them.

Now boil some water on a high flame. Place a plate which has holes in it. Place the leaves over it. Cover the pan and steam them for 15 minutes on high flame.

Patoli is ready. Remove it from the pot and serve it warm. You can drizzle some ghee over it. If you want to make them vegan, skip the ghee part. You can also keep them in the fridge for 3 to 4 days. Must try it and enjoy it.
