Salted Caramel Sauce

Salted caramel is one of the easiest recipes. I found this caramel recipe to be the best that I have ever, had. This is my first trial and it comes out perfectly. It is made with sugar, cream, butter, and salt. It is sweet, salty, and sticky caramel. And trust me if you love caramel then after trying this recipe you’ll be hooked with this caramel.

Sugar: The most important ingredient of caramel. Use granulated sugar. But do not stir the sugar while caramelizing. If you stir too much then sugar starts crystalizing and forms a lump. And this harms your caramel badly. So just swirl the pan.

Cream: You can use heavy cream or fresh cream for this recipe both go well.

Butter: Use unsalted butter because when you use salted butter then you can not control the salt balance. That’s why to use unsalted butter.

No Candy Thermometer

Unlike most candy recipes, this salted caramel doesn’t require a thermometer. Instead of that, I prefer you to use your eyes to determine the step. And it is not so difficult, this only takes 15 to 20 minutes. Then will thicken as it cools.

How To Make Caramel ?

  1. The first step is to melt the sugar with some water. And use a wooden spatula for stirring. Just stir once.
  2. After that cook the caramel on medium to low flame. Do not stir. just swirl the saucepan. Cook for 15 minutes or until the sugar turns light golden or amber in color.
  3. Then remove from heat and pour cream into it and mix with a spatula. Keep away from the saucepan because the caramel will bubble rapidly.
  4. Then turn on the heat and cook the caramel on low flame. Add butter and mix well.
  5. Cook for 2 to 3 minutes. Then remove from heat. Add salt and again mix well.
  6. Now leave it to cool down completely then pour into an airtight container and refrigerate it.

INGRIDENTS

  • 300 to 350 grams granulated sugar
  • 40 ml water
  • 250 ml heavy cream/fresh cream
  • 3 to 4 tablespoon unsalted butter
  • 1 to 2 teaspoon salt

Step by step method

Take a wide and heavy bottom saucepan. Add sugar.

Then add water.

Mix well with a wooden spatula. And then keep aside your spatula because after that do not use anything for stirring the sugar.

Turn on the heat and cook the sugar on medium flame. You can swirl the saucepan. When sugar completely dissolves then use a brush or wet the sides of the saucepan with some water to prevent the Crystals.

After that on medium flame cook the sugar.

After 12 minutes. Do not remove your eyes from the sugar because it is the game of timing. So keep watching. Or maintain the level of flame. Do not burn the sugar.

After 15 to 17 minutes. When you get the amber hue. Then remove from the heat.

Add cream and mix it with a wooden spatula. Be careful in this step because the caramel will bubble rapidly. Use room temperature cream. Remember while cooking with hot sugar liquid, the cream may splatter so maintain the distance.

Then mix well.

Now turn on the heat and cook on low flame. Add butter. Mix the butter well. Cook for 2 to 3 minutes and stir continuously. Turn off the heat.

Add salt. Mix well. You can adjust the salty flavor as per your taste.

Storing suggestions

After caramel cools down then pour it into a glass jar and refrigerate it for 1 month. You can also freeze it for 3 months. Whenever You need to reheat in the microwave and use it.
