What is upma?

Basically, upma is made by dry roasted semolina in water. Tempered with some spices and herbs.

Peanuts, cashews, onions, green chilies, curry leaves, and potatoes are used to enhance the flavor of upma. It is known with different names like uppumavu, uppuma, uppindi. It is served with peanut chutney, coconut chutney.

Quick upma recipe

Take semolina and dry roast them on a medium flame for 5 minutes. Set aside. Take a pan add some oil temper with some mustard seeds and curry leaves. When seeds splutter then add cubed potatoes and dry them until it is golden in color. Then add onions and green chilies. Add salt and a little bit turmeric. Saute for 10 minutes on medium flame. Then add semolina and sauce for 3 minutes on high flame then add water into it. Approx 750 ml of water. Cook on high flame until the upma turns into thick and absorbs all water. Turn off the heat.   • 2 small bowl semolina
  • 1 onion sliced
  • 5 to 6 green chillies chopped
  • 1/4 tablespoon black mustered seeds
  • 5 to 6 curry leaves
  • 4 potatoes sliced in cubes
  • 1 tablespoon salt
  • A pinch of turmeric
  • 750 ml water
  • 7 to 8 tablespoon refined oil

If you are using pre-roasted Rava, skin this step. But if not then follow, dry roast semolina on a medium flame for 7 to 8 minutes until it turns crunchy. Keep stirring. Do not turn them into gold.

After that chop onions, green chilies and potatoes in small cubes.

Take a pan add oil and heat it on high flame. Fry peanuts in the same pan and set aside for later.

In the same oil, Add mustered seeds and curry leaves.

When seeds splutter then add potatoes and cook on medium high flame for 7 to 8 minutes.

Then add onions, green chilies and saute.

Add salt and turmeric into it and cook on medium flame for 10 minutes.

When onions are slightly cooked then add dry roasted semolina and saute for 2 minutes.

Then add water into it and cook on high flame. Keep stiring it. Here taste the salt and adjust as per your taste.

Add peanuts at the end and turn off the heat. Mix well and serve hot with chutney.
