Baking Tips
Lining the cake tin- Always line your cake tin with baking paper or with oil, butter. It helps to prevent sticking the cake from the tin.
Batter consistency- For the eggless cake, the batter has to be thick but not too thick. If your cake batter is thin, you get a halwa-like consistency. So be careful with this step. Cooldown. Before you frost your cake, the cake has to be completely chilled. You can place your cake layer in the fridge for 25 to 30 minutes before frosting.

INGREDIENTS
- 1 bowl powdered sugar
- 1/3rd bowl refined oil
- 1/3rd bowl curd
- a pinch of salt
- 3 to 4 drops of vanilla
- 2 and a half bowl refined flour
- 3 to 4 tbsp mango puree
- 1/3rd gbsp baking soda
- 1/2 tbsp baking powder
- 50 to 80 ml milk(as required)
- non dairy whipping cream
- chopped mangoes
METHOD
Take a bowl. Add powdered sugar, oil, salt, and vanilla. Mix well.
Then add curd and mix it for 3 minutes. Then add mango puree.
Add baking soda, baking powder, and flour. Always add flour in batches and sift the flour first. Now mix it well. The batter should be doughy in this stage. Then, add milk and make a smooth flowing batter. Add a little amount of milk at the time.
Now, pour the cake batter in greased cake tin and bake it for 50 to 55 minutes at 180 degrees Celsius. Then, allow the cake to cool down. Cut them into three equal layers. Then, take a layer of cake. Spread some mango puree.
Pipe some whipped cream. Then, add chopped mangoes. Repeat the layer and frost the cake with whipped cream.
Here, I used non dairy whipping cream. First, you need to take some whipped cream mix and allow them to come in the liquid stage. But still, it should be chilled, then whip it for 10 minutes until it gets the soft peaks.
