Ingredients for Lauki burfi

1 medium-sized lauki (bottle gourd)

1 cup milk1 cup sugar (adjust to taste)

1 to 2 tbsp ghee (clarified butter)

1/2 tsp cardamom powder

4 to 5 tbsp Dessicated coconut

4 to 5 tbsp milk powder

A handful of chopped nuts (almonds, cashews, pistachios) for garnish

Healthy Lauki Burfi

1. Prepare the Lauki:

Peel the lauki and chop them into peices.

2. Cook the Lauki:

First pressure cook it for 5 to 6 whistles. Then mash them with the help of masher or you can also grind them.

In a pan, heat 1 tbsp ghee. Add the mashed lauki and sauté for about 10 to 15 minutes until it dry.

3. Add Milk:

Pour in the milk and cook on medium heat. Stir continuously until the milk is absorbed and the lauki is cooked thoroughly.

5. Flavoring:

Add sugar, cardamom powder and Dessicated coconut (if using), milk powder, some nuts. Mix well and cook until the mixture leaves the sides of the pan and starts to come together.

6. Set the Burfi:

Grease a tray or plate with a little ghee. Spread the lauki mixture evenly, smoothing the top with a spatula.

Sprinkle the chopped nuts on top. Let it cool for about 5 to 6 hours.8. Cut and Serve:Once set, cut into squares or diamond shapes and serve.
