Gatte ki sabzi | Besan gate ki sabzi- Learn this spicy and delicious curry recipe with detailed photos and video. Gatte ki sabzi is made with gram flour and the curry is based on onions, tomato gravy. It is the most popular curry recipe from Rajasthan. In this recipe, you need to make gatta which is small nuggets made with gram flour/besan and seasoned with some spices. Then for this gatta, we need to prepare a spicy gravy. Gatte ki sabzi goes well with roti or rice.
What is gatte ki sabzi?
Gatte ki sabzi is the traditional and famous curry recipe from Rajasthan. In Rajasthan, these besan nuggets are the best alternative for fresh vegetables. The main ingredient of this curry is besan/gram flour. First make some small nuggets with gram flour, some spices, salt. Then boil it and fry these nuggets. After that make some spicy curry and combine both of them. This curry is perfect to serve with plain hot rice or roti.

Ingredients
For gatta
- 1 cup besan/gram flour
- ½ tbsp salt
- 1/3 tbsp turmeric powder
- 1 tbsp coriander powder
- ½ tbsp cumin powder
- ½ tbsp garam masala powder
- 2 tbsp curd
- 1 tbsp red chili powder
- A pinch of hing/asfoetida
- ½ tsp nigella seeds
- ½ tsp carom seeds
- 1 tsp cumin seeds
- 2 to 3 tbsp vegetable oil
- 2 to 3 tbsp water
- Oil for frying
For gravy
- 3 to 4 sliced onions
- 1 tomato paste
- 2 tbsp crushed ginger, garlic
- 3 to4 chopped green chilies
- 1 tbsp salt
- ½ tbsp turmeric powder
- 1 tsp cumin seeds
- 2 bay leaf
- 3 to 4 dry red chilies
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- ½ tbsp garam masala powder
- 1 tbsp red chili powder
- 3 to4 tbsp mustard oil
- 300 ml water
How to make gatta?
Take a bowl, add besan/gram flour.
Then add salt, turmeric. You can adjust the salt as per your taste. Add all powdered and whole spices. add oil.
Add curd. mix it well.
Mix well then add some water and knead a soft dough. Do not add too much water at a time.
After kneading, divide it into equal pieces and roll it like a cylinder.
Make all of them like this.
Then take a saucepan, boil some water. Add gatta and boil it for 5 to 8 minutes.
When it starts to float then it is ready to remove from water. Leave it to cool down for 15 to 20 minutes.
Cut it into small pieces.
Now heat some oil on high flame. And fry these gattas for 2 to 3 minutes on high flame. Do not over fry them.
How to make gravy for gatta?
Take a Kadhai, add oil, and heat it for a minute. Then add cumin seed, bay leaf. Add ginger, garlic, and onions. Sauté it for 2 to 4 minutes on high flame.
Then add salt, turmeric powder. Mix well. Add all powdered spices. And cook it for 10 to 15 minutes on medium flame. Occasionally stir it.
After 12 minutes, masala is cooked well.
After that add tomato puree and again cook it for 5 to 10 minutes on medium flame.
Now you can see that masala starts to release oil. That means it is perfectly cooked.
Then add gatta and mix it well.
Add some water. Cook for 4 minutes n high flame. Then regulate the flame on low and cook it for 10 to 12 minutes.
Now you can see it is perfectly cooked. And ready to serve. Try this easy and tasty curry at your lunch or dinner.
